There are endless varieties, and Texans embrace them all: classic mustard potato salad, smoky baked potato versions, and even tangy German potato salads. I personally like to bake extra spuds just so I can turn them into potato salad the next day. Sure, microwaves are fast, but a properly baked potato with oil, salt, and pepper not only makes a great entrée—it becomes the perfect foundation for next-day potato salad.
