Sunday is National Taco Day. You'd think it would be on a Tuesday, but that's not the controversy that's afoot here. The controversy is, what is a "taco".

A taco can technically be defined as a tortilla folded or wrapped around some filling. I think we can all agree to that, with the exception being that once you roll it, it probably should be called a burrito.  Here's the real question and it involves the tortilla.  How do you define a "real" taco. Is it crispy or soft, corn or flour?  I hate to admit that I life in a crispy corn household. I say "I hate to admit" is because there's something about those corn shells that seems muy inathentica.  I do get away with soft corn on occasion when I make pork street tacos with onions and lime.  Then there's the proliferation of the "soft tacos" out there and finally, when I was growing up, all we ever had was fried, cripsy flour (which is probably the least popular now days).

So what is "authentic" at your place?  If you invited me over and just said "come over for tacos" what would I get?  Would it be crispy or soft, flour or corn?  Then, what is your default filling?  Are you like most with ground beef, or do you generally do a little something else?  I'm really interested in what the "one taco to rule them all is".  Let me know and I'll be over your house this Sunday for National Taco Day.
