My family eats a lot of chicken. It's good, it's versatile, and it cooks quickly. I've recently found 3 or 4 really good new recipes using chicken. This one I made last weekend and there were no leftovers. That's always a good sign!

There's only a few easy ingredients, in fact I had all of them in my kitchen without having to run to the store. It was easy to prepare but did take a little longer than expected to bake.

Ingredients:

  • 2 Tbls. olive oil
  • 1 clove minced garlic (I used jarred garlic)
  • 1 c. bread crumbs
  • 2/3 c. grated Parmesan cheese
  • 1/2 tsp. ground black pepper
  • 1 tsp. dried basil leaves
  • 4-6 skinless, boneless chicken breasts halves

Preheat oven to 350 degrees and grease a 9x13 baking pan.

You need one bowl to mix your oil and garlic. In a second bowl mix your bread crumbs, Parmesan cheese, basil and pepper.

Dip your chicken breast halves in the garlic and oil mixture then into the dry mix. Coat well and place chicken in the 9x13 baking dish. Use the remaining dry mix to pour over the chicken.

Place in oven and bake 30-35 minutes or until chicken juices run clear.

Serve with sides of your choice and enjoy!
